The seed has reached its maximum dry weight at that point, although it remains far too wet for closed storage.

  5. Let the receptacle lose its remaining moisture. Hang heads separately or set them face up on a screen, turning them as needed. Penn State recommends a warm, dry space and a paper bag around a hanging head where seed may fall.
  6. Rub fully dry seeds free by hand over a clean tray. Remove florets, broken hulls, stalk pieces, insects, and empty seed with a coarse screen and gentle winnowing. Spread the cleaned seed again before any jar test or final packing.

A paper towel under a small test portion exposes the mistake a jar conceals. If condensation forms inside a loosely closed test container or the seeds soften after several hours, return the entire batch to the screen. NDSU’s commercial guidance explains why: hulls dry before kernels, and a moisture reading taken immediately after drying can rebound after the two equalize.

What can be saved after an early cut or a damp harvest?

An early-cut head deserves inspection before disposal. If the back had begun yellowing, the bracts were browning, and sampled kernels are firm and filled, Penn State’s method allows the head to finish drying in a paper bag in a warm, dry place. Keep it out of a closed plastic tote. Seeds that are pale, soft, flat, or milky were cut before dry matter accumulation finished; NDSU warns that action before physiological maturity reduces yield and seed quality. Its harvest settings place normal combine ground speed at 3 to 5 mph (4.8 to 8 km/h), with slower travel as seed dries. The association treats about 3% total field loss as permissible; the NDSU guide records losses of 15% to 20% when excessive ground speed overloads even a well-adjusted combine. Header loss is measured separately by counting seed behind the header and subtracting seed already on the ground ahead of it.

Those extension guides do not set one universal header-loss percentage. Zhong Tang and colleagues’ 2025 review in Smart Agricultural Technology reports a lowest measured total header-loss rate of 3.12% in one cited experiment, at a 0.2-meter header height and 1.667 meters per second. The operating conditions belong with the number; 3.12% is an experimental result, rather than a promise for every header and field.

Drying temperatures depend on the seed’s destination and dryer design. NDSU permits no more than 110°F (43°C) for seed that will be planted. Its guide lists 120°F for bin-batch dryers, 180°F for column-batch dryers, and up to about 200°F for continuous-flow or recirculating-batch systems handling market seed, while warning that high heat can wrinkle or scorch confection kernels. Those are equipment limits, not oven instructions for a gardener’s planting seed.

Which storage checks protect food quality and germination?

Dryness comes before the lid. Penn State tells seed savers to keep seed cool, dry, and dark, labeled with the cultivar and harvest date. Its physical check is demanding: a properly dry seed resists a fingernail dent. That test is more useful to a gardener than pretending a household has a calibrated grain-moisture meter.

Field standards put numbers around the risk.
