How Many Scoops of Coffee per Cup? Target vs Reality

Use 13 grams of ground coffee per 240 mL cup, equivalent to roughly 1 to 1½ level two-tablespoon scoops, or 2 to 3 one-tablespoon scoops, because ground coffee varies in density. The dose follows the Specialty Coffee Association Golden Cup target of 55 g/L, or about 1:18; a 5-fluid-ounce coffee-maker “cup” needs about 8 grams. Weigh one level scoop once, then divide 13 by that weight for your repeatable scoops-per-cup figure.

How much coffee should you use for one cup?

For a practical 240 mL serving, 13.2 grams is the clean starting point. Multiply the water volume in liters by 55: 0.240 L × 55 g/L = 13.2 g. If the scale measures water as well, use 240 grams of water and 13 grams of coffee.

The Specialty Coffee Association’s Golden Cup specification gives 55 g/L with a tolerance of ±10 percent. For 240 mL, that full window is 11.9 to 14.5 grams. I would begin in the middle, taste the coffee after it cools enough to lose its tongue-scorching disguise, and move by one gram. Thirteen is a target. The number the scale reports is the observation.

For any size, use `coffee dose (g) = water volume (mL) × 0.055`.

Scoop arithmetic comes second. If your level scoop weighs 11 grams, 13 ÷ 11 gives 1.18 scoops. Call that one scoop plus a shallow fifth, or mark the right fill line on the handle with tape.

What does “one cup” actually measure?

A U.S. customary cup is 236.5882 mL in NIST Special Publication 811. FDA regulation 21 CFR 101.9 uses 240 mL for a cup on nutrition labels. Those definitions are close enough to share a 13-gram coffee dose: the difference at 55 g/L is only 0.2 gram.

Coffee-machine markings belong to another system. Cuisinart’s own grinding guide calls for one level scoop per “5 ounce cup.” NIST converts 5 U.S. fluid ounces to 147.9 mL, so that machine cup is only 62 percent of a 240 mL household cup.

That 16-ounce mug holds more than three machine cups. Filling it from a carafe marked “3” and dosing for one household cup produces a thin drink before grind or brew time enters the matter.

The SCA’s 55 g/L figure is a coffee-to-water ratio, so use the water going into the brewer. The grounds and filter retain some of it, which makes the drink in the mug weigh less. Measure the mug once to learn what you drink; measure the input water each time to control the recipe.

What size is a coffee scoop?

Manufacturers give “coffee scoop” at least two meanings. Moccamaster’s brown scoop specification says it holds two level tablespoons. Cuisinart’s grinding guide defines its level scoop as one tablespoon. A recipe that says “one scoop” without identifying the tool has left out half the measurement.

NIST puts one U.S. tablespoon at 14.78676 mL. The FDA rounds a tablespoon to 15 mL for nutrition labeling. A two-tablespoon scoop therefore holds about 29.6 to 30 mL by volume. Volume still does not tell us its mass.

Pérez-Campos, Fayos-Fernández, and Monzó-Cabrera measured roasted ground coffee across bulk densities of 310 to 420 kg/m³ in a 2023 laboratory study. That equals 0.31 to 0.42 g/mL. At those observed densities, a level 29.6 mL scoop would contain about 9.2 to 12.4 grams. Grind, roast, settling, and how firmly someone fills the bowl all affect the result.

This is an old recipe problem in modern dress. Among the 12,000 cookery volumes and 400 manuscript receipt books I oversee, “a spoonful” is useful only when the household’s spoon survives or another entry defines it. For coffee, level the scoop, weigh four fills together, and divide by four. The larger sample smooths out a stray hollow or mound.

Why can one scoop per cup taste unbalanced?

The phrase leaves two moving quantities unnamed: the cup may hold 118, 148, 237, 240, 355, or 473 mL, while a scoop may hold one or two tablespoons. Even a fixed 30 mL scoop carried 9.2 to 12.4 grams across the published density range above. One scoop into 148 mL and one into 473 mL cannot make the same strength.

Time and grind then govern how readily water extracts material from that dose. The SCA’s archived Protocols and Best Practices lists 1 to 4 minutes for fine grinds, 4 to 6 minutes for drip, and 6 to 8 minutes for coarse grinds. Bodum’s Chambord instructions specify a 4-minute steep for French press. Those figures describe different brewing systems, so scoop count cannot substitute for a method recipe.

Habara and Horiguchi’s 2024 full-immersion study found that finer grind significantly affected total dissolved solids and extraction, while roast level and grind size both affected the measured sensory attributes. A dark, bitter cup does not prove that the dose alone was wrong. For diagnosis, record the bag’s roast level and the grinder setting alongside the dose.

What should you change if the coffee tastes sour or bitter?

Keep coffee and water fixed for the next brew. Change the grind by one small setting, then observe taste and total brew time. This separates a ratio problem from an extraction problem instead of moving every control at once.

Habara and Horiguchi’s 2024 results make “sour means under-extracted; bitter means over-extracted” too crude for diagnosis. Sourness can belong to the coffee’s origin and roast, while bitterness may be present in a dark roast before brewing begins. Use paired evidence: taste plus an unusually quick drawdown, a long steep, or a changed bag of beans.

The soft, even light at my desk makes differences in roast color unusually easy to see today. Color still cannot tell me whether 13 grams brewed for five minutes will taste balanced. Dose, time, and the cooled cup can.

Do French press and pour-over need their own recipes?

Yes. Keep 55 g/L as a starting dose if you like its strength, then use a recipe written for the brewer. French press immerses all the grounds for a set interval. Pour-over sends fresh water through a bed whose grind, depth, and pouring pattern control flow.

Bodum makes the language problem visible. Its Chambord instructions call each 4 fluid ounces a “cup” and specify four minutes before lowering the plunger. Cuisinart calls 5 fluid ounces a cup. The FDA’s labeling cup is 240 mL, a little over 8 fluid ounces. Thus “one scoop per cup” can refer to three water quantities before anyone chooses a scoop.

For a 240 mL French press, my weight-based starting point is 13 grams of coarse ground coffee with a 4-minute steep. If your two-tablespoon scoop weighs 11 grams, use about 1.2 scoops. Press gently and decant the coffee rather than leaving the finished drink on the bed.

For pour-over, I prefer 15 grams of coffee to 250 grams of water, exactly 60 g/L and inside the SCA’s ±10 percent Golden Cup window. Record the total drawdown time, but resist borrowing the French press’s four minutes as a command. The filter, dripper geometry, batch size, and grind create their own pace. A repeatable pour pattern matters more than chasing a universal stopwatch number.

How do you turn a target ratio into a repeatable daily brew?

A small brewing record beats a drawer full of scoops. I learned that lesson after dating a pudding from a printed cookbook and missing its kitchen life by 80 years. Household accounts showed when the ingredients were actually bought. The printed recipe was a target; the purchases were observations.

  1. Measure the water your vessel truly uses. Put the empty mug or carafe on a scale, tare it, fill to your normal level, and record the grams. For water in kitchen use, grams and milliliters are close enough for this recipe.
  2. Calibrate the scoop with the coffee you are using. Weigh four level scoops together, divide by four, and write the result beside the brewer. Recheck after changing beans, roast level, or grind.
  3. Brew the 55 g/L target. Multiply water milliliters by 0.055, use that coffee mass, and record grind setting plus total contact or drawdown time.
  4. Taste after the cup cools, then alter one control. Move dose by 1 gram for strength; move grind one setting when taste and time point to extraction. Keep the change that improves the next cup.

After several brews, the record might read “240 g water, 14 g coffee, grind 18, 3:20 drawdown.” That is your recipe. If 14 grams equals 1.25 scoops of the coffee currently in the tin, the fraction has earned its precision because it came from your kitchen.
